Fresh, died, or frozen leaves and rind are used in Southeast Asian cuisine.  Highly aromatic leaves and fruit.    Kaffir lime has many health benefits-  antibacterial, anti-inflammatory, and antioxidant properties. 
 
Of the citrus we grow, Kaffir lime is one of the least cold tolerant.  Needs to be brought indoors over winter.
